Mexican Food

2 chicken breasts
3 tomatoes, chopped
1 hot pepper, chopped
1/2 onion, chopped
1/2 tablespoon garlic powder
1 tablespoon cumin
1/2 tablespoon salt
1/2 tablespoon black pepper
1 tablespoon oregano
1 teaspoon cayenne pepper
1/2 teaspoon crushed red pepper
1 teaspoon lemon juice

shredded pepper jack cheese
sour cream
1/4 red onion chopped
1 hot pepper
hot sauce

1.  Throw all the filling ingredients in the crock pot and cook on high for four hours.
2.  Blacken the hot pepper for garnish over the stove or on the bbq.  When the skin is mostly black put it in a bowl and cover with a towel for 5 minutes.  Remove the blackened skin and chop.
3.  When the filling has stopped cooking separate the chicken and veggies from the liquid.
4.  Build your warp however you like with the different garnishes.

We call this Mexican Food because I wasn't sure what it would actually be called.  I say this all the time but it is SO easy and tasty.  You can add all kinds of things to the mix including corn or salsa or fresh tomatoes.
