Beef Broccoli with Cauliflower Rice

1 tbs oil
1/2 pound (225 g) beef, sliced into thin pieces
2 cups broccoli
3 cloves of garlic, crushed
1/2 red onion, thinly sliced
1 tbs soy sauce
2 tps rice vinegar
1/2 head of cauliflower

1.  In a pot of hot water, boil the broccoli until tender (this works for fresh or frozen).
2.  In a skillet, heat the oil.  Cook the meat on medium heat until it is almost cooked through.
3.  Add the broccoli, garlic, onion, soy sauce, and rice vinegar to the meat and cook for another minute.  (Keep stirring so the garlic doesn't burn.)
4.  Remove everything from the skillet and set aside (leave the juices in the bottom of the pan, it will help the cauliflower).
5.  Using the largest holes on a box grater, grate the cauliflower (see, it's starting to look like rice!)
6.  Put the cauliflower in the skillet and stir fry until tender (2-3 minutes).
7.  Serve the beef broccoli over the cauliflower rice.
