 Air Fryer Brik



1 potato

2 tbs grated mozzarella cheese

1 egg (beaten)

1 tsp capers

1/4 cup cooked shrimp/shredded chicken/tuna

Phyllo dough (thawed and cut into 3 inch strips)

2 tbs melted butter


Note: as you work with the phyllo dough you should be cautious to not let it dry out. Keep the dough covered with a damp paper towel. 


  1. Peel and dice the potato, boil for 15 minutes.
  2. Coat the bottom of an air fryer safe pan with melted butter.
  3. Mix together potato, cheese, egg, capers and choice of protein.
  4. Place 2 tbs of filling at the top of one of the strips of phyllo dough and roll.
  5. Place in the pan and repeat until you’ve used up all the filling.
  6. Brush melted butter over the top of all the rolled brik.
  7. Cook in the air fryer for 7 minutes at 350*.

Brik is an essential part of the Tunisian Ramadan breaking of the fast meal. They come in many shapes and sizes but always include malsouka (thin pastry) and eggs. Since being in the United States we used up all of the malsouka that we brought with us. I tried my hand at making them from scratch which was moderately successful, but I definitely need to practice my technique. Using phyllo dough, brushed with butter, in the air fryer gave a very similar taste and texture.  Although it’s not exactly the same it  fills the whole at the dinner table.
