White Cake
White Cake
2 1/4 cups of flour
1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 stick (110 g) melted butter
1 1/4 cup milk
1/8 cup vegetable oil
1 tablespoon vanilla extract
3 large eggs
1. Mix all the dry ingredients together.
2. Mix in the melted butter until you have a wet sand consistency throughout.
3. Mix in milk, oil, vanilla, and eggs until everything is smooth.
4. Pour into a greased 9-inch pan.
5. Bake at 350* F (177* C) for 25-35 minutes.

This cake ends up tasting like a box mix. I like making it because you can do it on the spur of the moment (no special ingredients needed). And you don't kneed to use a mixer or other special tools (no need to sift the flour or cream the butter). I've found that it keeps really well, lasting about a week without drying out.
We have been eating the cake plain for breakfast or spreading some Nutella or peanut butter on top.
