Chocolate Banana Muffins
2 ripe bananas
1/3 cup (113 g) melted butter
1 egg
1 teaspoon vanilla
2 tablespoons milk
1 teaspoon baking soda
1 pinch of salt
3/4 cup of sugar
1 1/2 cups flour
1/2 cup unsweetened coco powder
1. Mash the bananas and mix with the melted butter.
2. Add in the other wet ingredients until everything is all mixed together.
3. Mix in the dry ingredients.
4. Fill cupcake molds or papers to about 2/3 of the way full.
5. Bake at 350* F (175* C) for 20 minutes. Check with a toothpick (it should come out clean).

I tend to get on a banana kick every few months and I buy and eat massive amounts of bananas. And then I fizzle out and usually end up with a few that have turned mushy and brown. What better way to use use super ripe bananas than to make banana bread. These are extra yummy because of the addition of the coco powder. They have an almost cake like texture (versus a muffin) and aren't too sweet.
You can use any cupcake papers and tins or cupcake molds. These are the ones I used from IKEA.
