Donuts!

Donuts!













1 packet yeast
2 tablespoons warm water
3/4 cup room temperature milk
1/4 cup sugar
1/2 teaspoon salt
1 egg
2 1/2 tablespoons margarine
2 1/2 cups flour
vegetable oil
2 1/2 tablespoons butter
1 cup powdered sugar
1/2 teaspoon vanilla
hot water

1.  Dissolve yeast in warm water and let bloom for about five minutes.
2.  Add milk, sugar, salt, eggs, margarine, and flour.
3.  Mix with a spatula until you have a smooth dough.  (At this point you might need to add a bit more flour so it's not sticky depending on the humidity.)
4.  Let rest and rise for one hour.
5.  Turn the dough out on to a floured surface and roll it to about 1/2 inch thickness and cut out donuts (I used a large cup and a shot glass).
6.  Cover and let rest again for about an hour (the dough will expand so make sure they have room to grow).
7.  Heat vegetable oil (you'll know it's hot enough when you sprinkle in some flour and it crackles).  Carefully slide your donuts into the oil.  Keep a close eye on them and flip once they have browned.  Remove once they are golden on both sides.
8.  Let drain on a paper towel lined cooling rack.
9.  Heat butter until melted and then stir in the powdered sugar and vanilla.  Slowly add hot water, tablespoons at a time (I used two), until you have a smooth glaze.
10.  Dip the donuts into the glaze and enjoy!

Every now and then I get intense cravings for food that just doesn't exist here.  On days like I this I go on a hunt for copycat recipes and try to satisfy my craving with a homemade version.  Today, my big craving was for Krispy Kream donuts.  Except for the time required for resting, it was a very easy recipe to make.  It did take some finesse to get the timing just right so the donuts came out the right color.  I especially liked the donut holes which turned out like puffy little clouds of donut goodness.
