Lasagna For Two


200g (1/2 pound) ground beef
1 tbs vegetable oil
1/3 cup tomato paste
1 tsp salt
1/2 tsp pepper
3 cloves garlic, crushed
1/2 tbs ground rosemary and thyme
1/2 tbs oregano
3 cups water
6 sheets of no-boil lasagna noodles
2 cups shredded cheese
1 cup ricotta
1/4 cup water

1.  In a pot heat half of the vegetable oil.  Cook the ground beef until it is browned.  Put the meat to the side.
2.  Add the remaining oil to the pot with the tomato paste.  Allow to cook while stirring for about a minute.  
3.  Add in the salt, pepper, garlic, rosemary, thyme and oregano and stir together.
4.  Add water, meat and cover.  Lower the heat so that the sauce slowly bubbles for about 10 minutes.
5.  Mix together shredded cheese (reserving a small amount for the top) and ricotta.
6.  Assemble the lasagna.  Put a thin coating of sauce at the bottom of the pan (this will prevent the noodles from sticking).  Then repeat this pattern until you've used all of the ingredients: noodles, cheese mixture, sauce.  After the last sauce top with the reserved shredded cheese.
7.  Carefully pour the 1/4 of a cup of water around the edges of the lasagna (make sure you don't wash the sauce off the noodles in doing so).
8.  Cover with foil and bake per the instructions for the lasagna noodles (usually 45 minutes).

Lasagna is one of my favorite dinners to make and with no-boil noodles, it is SO easy!  It might not be the prettiest thing, but it sure is yummy!  

If you want to make it a little bit healthier you can saute spinach and add it to the sauce.
