Cream Cheese Chocolate Chip Cookies
Half Batch - 12 cookies
75 g (1/3 cup) cream cheese (room temperature)
75 g (1/3 cup) melted butter
1/2 cup brown sugar
1/4 cup sugar
1 tsp vanilla
1/4 tsp baking soda
1/4 tsp salt
1 cup + 1 1/2 tbs flour
3/4 cup chocolate
Full Batch - 24 cookies
150 g (2/3 cup) cream cheese (room temperature)
150 g (2/3 cup) melted butter
1 cup brown sugar
1/2 cup sugar
2 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
2 cup + 3 tbs flour
1 1/2 cup chocolate
1. Cream together the cream cheese, melted butter, brown sugar and sugar until everything is well combined. (You want to make sure there aren't any cream cheese lumps because the texture of your cookie will be weird.)
2. Mix in vanilla.
3. Add baking soda, salt, and flour and stir until just combined.
4. Fold in chocolate.
5. Divide the dough and roll into small balls.
6. Place on baking paper lined baking sheet and flatten very slightly.
7. Bake at 162* C (325* F) for 13 minutes (or until slightly browned).

I was craving chocolate chip cookies the other night but didn't have any eggs. I found this recipe and made a few changes to it based on the amount of ingredients I had in my fridge. They turned out SO delicious. They were very plump and had a great, rich flavor. I'm throwing away all other chocolate chip recipes and will only be making these from now on!
If you're feeling fancy you can change up the kind of chocolate you use (M&M's or Smarties, chopped up candy bars, chocolate chips or chocolate chunk). You could also throw in chopped nuts (almonds, walnuts, or peanuts would be great). However, you should reduce the amount of chocolate so that your chocolate + nuts together equal the amount of chocolate the recipe calls for (that way you'll have enough dough to hold everything together).
