Lablebi
This is winter comfort food! It's not something I have ever made, and at this point have no intentions of making. Why? Because eating lablebi out at a local restaurant is part of the whole experience.
So let's set the scene. It's a chilly winter evening. It's been raining on and off all day and you just feel cold. You're hungry for something that is going to fill your stomach and warm you up from the inside out.
Outside of every lablebi restaurant are a pile of bowls and a box full of day old bread.
Just grab a few hunks of bread and rip them into tiny pieces.
After all the bread is in pieces you take it up to the guy behind the counter. If you'd like hergma (basically meat jelly [beef collagen]) he pulls a chunk out of a bubbling pot and chops it into tiny pieces then adds it to your bowl of bread.
Next he'll add a serving of cooked chickpeas and spices on top.
You have the option of adding a soft boiled egg on top, and a big spoonful of harissa, if you like it hot!
Once your bowl is filled, take it back to your table and mix it all together.
After it's mixed and the bread has soaked up most of the juices, I like to top mine with chopped red onion, black olives, and preserved lemons and carrots.
One bowl is always enough for both of us. It fills you up and really warms you up from the inside out! And, for the two of us it's about 5DT which is roughly $2.13 US. Sure can't beat that!
Labelbi is my all time favorite winter meal!
