No Knead Bread
2 3/4 cups flour
1 tablespoon dry yeast
1/2 tablespoon honey
2 tablespoons warm water
1 teaspoon salt
1/8 teaspoon baking powder
1 cup + 2 tablespoons warm milk
butter
cornmeal
1. Mix yeast, honey, and water. Let it hang out while you mix the other dry ingredients.
2. Mix salt, baking powder, and flour.
3. Add milk and half the dry mixture to the yeast and mix well.
4. Add the rest of the dry mixture and mix it thoroughly. (At this point you will have something that does not resemble bread dough at all. It will be wet and sticky, that's the way you want it to be.)
5. Grease a loaf pan with the butter and dust with about a tablespoon of the cornmeal.
6. Pour the batter into the pan and let it sit in a warm place for about 30-45 minutes, until it has doubled in size.
7. Bake at 425*F (220* C) for about 20 minutes until the top is nice and golden.
8. Remove from the oven and let cool.
I served this warm from the oven with some butter and honey on top. It was also really good sliced and toasted. It doesn't turn out as a sweet bread, so you can use it to make sandwiches too.

I changed it a bit to fit my needs. It did not turn out like a real English muffin, full of nooks and crannies. BUT it was super yummy and lasted a really long time in a sealed bag.
