Rainbow Cupcakes
Rainbow Cupcakes
2 1/4 cups of flour
1 1/2 cups sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1 stick (110 g) melted butter
1 1/4 cup milk
1/8 cup vegetable oil
1 tablespoon vanilla extract
3 large eggs
food coloring
1. Mix all the dry ingredients together.
2. Mix in the melted butter until you have a wet sand consistency throughout.
3. Mix in milk, oil, vanilla, and eggs until everything is smooth.
4. Divide into 4 different bowls and color with food coloring. (You need to use a lot more food coloring than you think you do to get vibrant colors that last through backing.)
5. Pour into cupcake molds, alternating with different colors to get the rainbow/marble effect.
5. Bake at 350* F (177* C) for 15-20 minutes.

6. Cool and remove from cupcake molds before frosting.

These cupcakes taste just like birthday cake and they are so pretty! They can be topped with a simple powdered sugar frosting or can stand alone.
