Chicken, Broccoli & Cheese


2 chicken breasts
2 cups cream of mushroom soup (see note below)
2 cups frozen broccoli
1 cup of chedder cheese 
1/4 cup crushed TUC (or Ritz) crackers
fettuccine egg noodles

1.  Boil chicken and cut into bite sized pieces.
2.  Mix chicken, cream of mushroom soup, broccoli, and cheese together and place in baking dish.
3.  Top with extra cheese and crackers.
4.  Bake at 350* F (170* C) for about 15 minutes until everything is hot a bubbly.
5.  Serve over egg noodles.

* NOTE: In America you can use one can of cream of mushroom soup thinned with an equal amount of milk.  If you are using a powered version (found next to the bullion) use about three cups of liquid rather than the recommended five.

This is major comfort food for me.  Ever since I was little this was my favorite food.  Every time I visit my family my mom makes this.  My mom used to send care packages with cans of cream of broccoli cheddar soup (that's what the original recipe calls for).  I was so excited that I was able to find all the ingredients here!  (Okay, the cheddar is imported, but you could use a local cheese.)  You really can't go wrong with chicken, broccoli, cheese, and noddles!!
