Sugar Cookies

Sugar Cookies

3 sticks butter (340 g)
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
4 1/2 cups flour
1 teaspoon baking powder

1.  Melt the butter and mix with sugar.
2.  Add eggs and vanilla and mix until everything is smooth.
3.  Slowly add the flour and baking powder and stir.
4.  At this point you can either put the dough in the fridge or freezer to use later or use the dough right now.
5.  Roll the dough to about a 1/4 of an inch and cut it out to the desired shapes.
6.  Put on a foil lined baking sheet and bake at 350* F (170* C) for 10 minutes (or until slightly browned around the edges).
7.  Let the cookies cool before moving to a plate or cooking rack.
8.  They are great on their own but you can ice with 1 cup powdered sugar and 1 1/2 tablespoons milk.

When you first look at this recipe you're going to think, wait a minute, aren't you supposed to cream softened butter and sugar together when you make cookies?  Yes, yes you are.  But I have no patience and didn't think before hand to put the butter out.  So I melted it and guess what, it worked!

Who doesn't love cut out cookies that you can decorate any way you like!  I have these super cute cookie cutters from Ikea to make little woodland creatures.

The cookies go great with this eggnog.
