Almost Like Crab Cakes


2 cups shredded zucchini 
1 egg
2 tablespoons (15 g) butter, melted
3/4 cup bread crumbs
1/4 cup minced red onion
2 teaspoons Old Bay Seasoning
flour
vegetable oil

1.  Combine zucchini, egg, butter, bread crumbs, onion, and seasoning together.
2.  Form into patties and dredge in flour.
3.  Shallow fry in oil until brown on both sides (about 2 minutes per side).

My Aunt and Uncle live in Maryland, the home of the crab cake.  Every time we visit they serve us a feast that always includes the dish, made with fresh-from-the-sea crab.  On my last visit with them, my Uncle gifted us a tin of Old Bay Seasoning.  I brought it home with me and it's been sitting on top of my fridge for over a month now.  I saw a recipe the other day for zucchini "crab" cakes that used Old Bay, and since we can't get quality lump crab here, I decided to give it a try (although I did switch it up just a little bit).  

These "Almost Like Crab Cakes" were SO easy to put together and tasted like magic.  Because of the shredded zucchini you get a similar texture to crab cakes and the Old Bay gives you that familiar flavor.  I would 10 out of 10 recommend trying this!  If you don't have Old Bay Seasoning, you should go out and buy some right now!  (If you live somewhere that you can't buy it, here is a website with a DIY recipe.)  This recipe made enough for me to taste one and then leave 4 to take for lunch tomorrow.
